According to Yelp's "Hidden Gems" in every state list, the hidden gem of the Land of Lincoln is a burger restaurant in Morton Grove, Illinois called Boba Burger. Boba Burger is a unique burger joint that according to reviews on Yelp is connected to a bowling alley called Classic Bowl, and on Yelp they say this about these "hidden gems"...

"Whether you’re looking for a new local haunt to impress your friends, or a charming hidden spot to surprise your significant other with, this list has it all... If you’re ready to go beyond the obvious and discover the quirky, the unusual, and the downright delightful, read on for our list of the best hidden gems in each state according to Elites."

If you go off of that definition of a hidden gem then Boba Burger certainly meets the criteria. According to Open Menu the Boba Burger menu is loaded with unique flavors and eats, some of the burgers include the classic Boba Burger, the Hawaiian Burger with pineapple and fried spam, the Seoul Burger with kimchi, bacon, and a fried egg, and the BBQ Lechon burger with pork belly and bbq sauce.

I will say that it is hard to choose just one hidden gem per state, honestly, I could make a case for a couple of places here in Quincy like Maid-Rite, Seoul2Soul, and Tiramisu to be hidden gems here in the Land of Lincoln.
